No Bake Coconut Date Bites

Is it just me, or does quarantine have you all out of whack!? Like, what day is it? Ice cream for breakfast? Sure, why not. Our world is already upside down. 

It’s no secret we’re leaning into baseline comforts more than ever. I catch myself eating junk I would normally avoid but, at some point, you gotta draw a line in the sand. Yesterday, I decided I ought to find a better way to curb my afternoon sweet tooth. So, I headed to the store (in my mask & gloves, of course) and loaded up on healthy food. Read on for one of my favorite guilt-free indulgences. It’s gluten-free, vegan, paleo, and Whole-30 compliant. AND, it only takes 5 minutes to make. Can’t beat that!

To get started, all you need is a food processor and simple ingredients I’ve outlined below. I hope you enjoy it!

Active Time: 5 minutes Total Time: Approx. 1 hour Yields: 15

Ingredients
1. 2/3 cup cashews (I used salted cashews)
2. 20 dates (about 2 cups chopped)
3. 2 tbsp. coconut oil
4. 1 cup shredded coconut, divided

Directions
1. Add cashews to your food processor and pulse for about 10 seconds. See below for desired texture 🙂

2. Add 1/2 cup shredded coconut, 20 dates, and 2 tbsp. coconut oil. Pulse for about a minute, or until all ingredients are evenly combined and smoothly blended. 

3. Using a spoon or scoop, roll about 1 tbsp into individual balls. Roll in the remaining shredded coconut until it’s coated to your liking 🙂 

And voila! How easy is that? 4 ingredients. 5 minutes. 

 …aaaaand now we wait. Place your coconut date bites in the fridge for an hour to allow them to firm up. Store in the refrigerator in a container once firm!
